Ingredients

  • 250g brown rice, rinsed
  • 150g green lentils, rinsed (do not use red here, they go mushy)
  • 800ml vegetable stock
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds (or ground coriander)
  • 1/2 tsp turmeric
  • 1 tsp garlic paste
  • 1 bay leaf
  • 1 tsp olive oil
  • Salt to taste

Method

  1. Saute cumin and coriander seeds in olive oil on saute mode for 60 seconds until they pop.
  2. Add garlic paste and stir for 30 seconds.
  3. Add rice, lentils, stock, turmeric, and bay leaf. Stir to combine.
  4. Seal and cook on high pressure for 28 minutes (green lentils need longer than red).
  5. Natural release 10 minutes, quick release remainder, remove bay leaf, fluff and season.

Flavour variations

Mujaddara
Top with caramelised onions, cooked low and slow in a separate pan while the pressure cooker does its work. A classic Middle Eastern combination.
Lemon & Herb
Finish with zest and juice of 1 lemon, a handful of flat-leaf parsley, and a drizzle of extra virgin olive oil.
Smoky Chipotle
Stir in 1 tbsp chipotle paste and 1/2 a can of sweetcorn after cooking. Serve with lime wedges and sliced spring onion.
Greek-Style
Add 1 tsp dried oregano and a handful of sun-dried tomatoes before cooking. Finish with a squeeze of lemon and olives.

Tip: Green lentils hold their shape under pressure whereas red lentils dissolve. Use green lentils when you want texture and red when you want creaminess.

Highlights: Highest protein of the rice bases, plus folate and manganese.
