Ingredients
- Peanut butter: 1 cup peanuts
- Ice cream: 6 dates, de-seeded
- 1/4 cup water
- 4 frozen bananas
- 1 tbsp homemade peanut butter (from above)
- 1/2 tbsp jaggery powder
- 1/8 tsp rock salt
- Topping: 1 tbsp almonds, roasted and chopped
- 1 tbsp peanut butter
Method
- To make peanut butter: heat a pot, add the peanuts, and roast them over a low flame while continuously stirring for 8 minutes.
- Transfer the roasted peanuts into a blender and blend for 5-7 minutes. Initially the peanuts will turn into a powder, then transform into a creamy, buttery substance. If it sticks to the side, scrape it down and blend again.
- Place the dates and water in a blender and blend until a paste is formed.
- Add all the remaining ice cream ingredients to the blender and blend again until smooth.
- Scoop out the ice cream into bowls, add the toppings, and serve cold.
Tip: Peel and slice 4 bananas and freeze for 6 hours. The homemade peanut butter takes patience - usually 5-7 minutes of continuous blending before it turns from powder to butter.
Highlights: High in vitamin E, potassium and magnesium.
