Ingredients

  • 1 tbsp cumin seeds
  • 1 tbsp coriander seeds
  • 1/4 cup vegetable broth
  • 1 medium yellow onion, diced
  • 2 tbsp diced serrano or jalapeño pepper
  • 1 cup diced tomato
  • 1 tsp ground turmeric
  • 2 tbsp minced ginger
  • 1 ½ cups dry red lentils, rinsed well
  • 4 cups vegetable broth
  • 14 oz coconut milk
  • 1/2 tsp salt, 1/4 tsp black pepper (optional)
  • 2 cups chopped spinach
  • 1 lemon, juiced
  • 1/4 cup chopped coriander
  • 1/4 tsp red pepper flakes (optional)

Method

  1. Toast the cumin and coriander seeds in a dry pot over medium heat for 1-2 minutes, until fragrant.
  2. Add the broth, onion, chili, and tomato, and cook 5-7 minutes until the onion softens.
  3. Stir in the turmeric, ginger, lentils, broth, coconut milk, salt, and pepper.
  4. Bring to a simmer, then cover and cook on low for 40 minutes, stirring occasionally, until the lentils break down.
  5. Stir in the spinach until wilted, then finish with lemon juice, coriander, and red pepper flakes.

Tip: Rinse red lentils very well - they're naturally a bit dusty.
