Ingredients
- 250g brown rice, rinsed
- 2 medium sweet potatoes, peeled and cubed
- 1 can chickpeas, drained and rinsed
- 700ml vegetable stock
- 1 can chopped tomatoes
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1 tsp garlic paste
- Salt and black pepper
Method
- Combine all ingredients in the pressure cooker pot and stir well.
- Seal the lid and cook on high pressure for 20 minutes.
- Natural release for 10 minutes, then quick release the remainder.
- Stir, taste, and adjust seasoning. The sweet potato will partially break down, creating a naturally thick stew.
Flavour variations
- Moroccan
- Add 1 tsp ras el hanout, 1/2 tsp harissa, and a handful of dried apricots before cooking. Finish with toasted flaked almonds.
- West African Peanut
- Stir in 2 tbsp natural peanut butter and a splash of hot sauce after cooking. Top with crushed peanuts.
- Thai Green
- Replace tomatoes with coconut milk and add 1 tbsp Thai green curry paste. Finish with fresh basil and lime juice.
- Ethiopian Berbere
- Use 2 tsp berbere spice blend instead of individual spices. Serve with a wedge of lemon and fresh injera if available.
Tip: Cube sweet potatoes to a consistent size, roughly 2cm, so they cook evenly under pressure. Irregular chunks result in some being mushy and some firm.
Highlights: Exceptionally high in vitamin A, plus vitamin B6 and potassium.
