Ingredients

  • 1 cup cooked brown rice
  • 1 ½ cups black-eyed peas, drained (reserve ¾ cup whole)
  • 1/3 cup almond meal
  • 1/4 cup cornmeal or oat flour
  • 1/2 cup diced onion
  • 1/2 cup diced green bell pepper
  • 1/4 cup diced celery
  • 2 tbsp tahini
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne (optional)
  • 1 tsp salt and 1/4 tsp black pepper (optional)
  • 6 whole-grain buns or lettuce wraps
  • Lettuce, tomato, red onion, pickles, for serving

Method

  1. Blend the rice, most of the black-eyed peas (reserving ¾ cup), almond meal, and cornmeal in a food processor until combined.
  2. Add the onion, pepper, celery, spices, vinegar, and tahini, and blend again.
  3. Pulse in the reserved black-eyed peas just until mixed through, keeping some whole for texture.
  4. Shape into 6 patties, about 4 inches wide and 1/2 an inch thick.
  5. Air fry at 350°F for 16 minutes, flipping halfway (or bake at 375°F for 30 minutes, flipping halfway).
  6. Assemble on buns with your favourite toppings.

Tip: These freeze well uncooked - shape, freeze on a tray, then bag for later.

Highlights: 12g fibre per burger, and they hold together without egg or oil.
