Ingredients

  • 4 cups finely grated red carrots
  • One-1/3 cup jaggery powder
  • 1 tsp cardamom powder
  • 20 saffron strands
  • 1 tsp lemon juice
  • Pinch of rock salt
  • Date paste: 1/2 cup chopped dates, de-seeded
  • 1/4 cup warm water
  • Thick coconut milk: 1/2 cup chopped coconut
  • 1/2 cup water
  • Topping: 1/4 cup almonds, roasted and chopped
  • 1/4 cup cashews, roasted and chopped
  • 2 tbsp pistachios, roasted and chopped

Method

  1. Heat a pot and add the grated carrots. Cook for 30 minutes on medium flame until the water is absorbed and the carrots are soft.
  2. Meanwhile, prepare date paste by blending dates and warm water together until smooth.
  3. Prepare the thick coconut milk by blending chopped coconut and water, then straining through a nut milk bag or muslin cloth.
  4. Once the carrots are cooked, add the jaggery powder, cardamom powder, saffron, and date paste to the pot and mix well.
  5. Switch off the stove. Add the thick coconut milk, stir, and immediately close the lid. Let the coconut milk cook from the heat inside the pot.
  6. Add the lemon juice, rock salt, and stir. Add the toppings.
  7. Once the halwa comes to room temperature, place it in a refrigerator for 30 minutes before serving so the flavours can bloom.

Tip: Use red carrots, available only in winter. Their natural sweetness and deeper colour make this recipe exceptional.

Highlights: Exceptionally high in vitamin A, plus iron and vitamin E.
