Flavour variations

Thai Coconut
Replace 200ml stock with coconut milk and add 1 tbsp Thai red curry paste. Top with a swirl of coconut cream.
Carrot & Ginger
Replace one sweet potato with 3 large carrots and double the ginger paste for a sharper, warming flavour.
North African
Add 1 tsp harissa and 1/2 tsp ras el hanout. Top with a spoonful of Greek-style oat yoghurt and a pinch of za'atar.
Spiced Apple
Add one peeled and diced apple and a pinch of nutmeg before cooking. The sweetness balances the earthiness of the lentils.

Tip: This soup freezes exceptionally well before blending. Freeze in batches, defrost overnight, then blend fresh to order for best texture.

Highlights: Exceptionally high in vitamin A, plus potassium and vitamin B6.
