Ingredients

  • 14 oz firm tofu, pressed and cubed
  • 1 tbsp miso paste
  • 1-2 tbsp chili paste (optional)
  • 1 tbsp lime zest
  • 2 tbsp fresh lime juice
  • 1/4 tsp salt (optional)
  • 8 oz dry whole-grain noodles (soba, udon, or brown rice)
  • 3 cups broccoli florets
  • 3 cups water
  • 2 tbsp coconut aminos or reduced- sodium tamari
  • 2 cloves garlic, minced
  • Sliced green onion, to serve

Method

  1. Preheat the oven to 400°F and line a baking sheet with parchment.
  2. Whisk the chili paste, lime zest, lime juice, and salt together, then toss the tofu through to coat.
  3. Spread the tofu on the sheet and bake 30 minutes, tossing halfway, until crisp.
  4. Cook the noodles according to package directions, rinse with cold water, and set aside.
  5. Bring the water, miso, and tamari to a simmer in a large pot, whisking until the miso dissolves, then add the broccoli and garlic and cook until just tender, 3-4 minutes.
  6. Divide the noodles and broccoli between bowls, top with the crispy tofu, and garnish with green onion.

Tip: The miso broth doubles as a light dressing - spoon extra over the noodles.
