Ingredients

  • 250g brown rice, rinsed
  • 150g red lentils, rinsed
  • 800ml vegetable stock
  • 1 can chopped tomatoes
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp garam masala
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1 tsp coconut oil

Method

  1. Saute garlic and ginger paste in coconut oil in the pressure cooker for 60 seconds.
  2. Add all dry spices and stir for 30 seconds until fragrant.
  3. Add rice, lentils, stock, and tomatoes. Stir well.
  4. Seal and cook on high pressure for 18 minutes.
  5. Natural release for 10 minutes, quick release remaining steam, then stir vigorously. The lentils will thicken the base.

Flavour variations

Punjabi Tadka
In a small pan, heat oil and add 1 tsp mustard seeds, dried red chilli, and a pinch of asafoetida. Pour the sizzling tadka over the cooked dal just before serving.
Coconut Dal
Replace 200ml of stock with coconut milk. Add a squeeze of lime and fresh coriander to finish.
Saag Dal
Stir through 2 large handfuls of spinach immediately after opening the lid. The residual heat wilts it perfectly.
Tomato & Tamarind
Add 1 tbsp tamarind paste and an extra can of tomatoes for a more acidic, restaurant-style flavour profile.

Tip: Red lentils break down completely under pressure, thickening the base naturally without any blending. If it is too thick, add a splash of hot water and stir.

Highlights: High in iron, folate and vitamin A.
