Ingredients

  • 2 cups cooked brown rice
  • 4 cups finely chopped kale
  • 1/2 cup diced cooked sweet potato
  • 1 cup diced steamed beets
  • 1/4 cup grated carrot
  • 1/2 cup corn
  • 1 cup steamed edamame
  • 1 cup cooked chickpeas
  • 2-4 tbsp sauerkraut
  • 2 tbsp pickled red onion
  • 2 tbsp chopped cashews or almonds
  • 1/3 cup aquafaba or water
  • 1/4 cup tahini
  • 1 tbsp flax meal
  • 2 cloves garlic, chopped
  • 3 tbsp apple cider vinegar or lemon juice
  • 1/2 cup nutritional yeast
  • 2 tbsp coconut aminos
  • 1/2 tsp maple syrup (optional)
  • 1/2 tsp turmeric
  • 1/4 tsp black pepper (optional)

Method

  1. Massage the kale with a little lemon juice or oil for 30- 60 seconds to tenderize it, then layer it with the rice as your bowl base.
  2. Blend the aquafaba, tahini, flax meal, garlic, vinegar, nutritional yeast, coconut aminos, maple syrup, turmeric, and pepper until smooth for the dressing.
  3. Arrange the sweet potato, beets, carrot, corn, edamame, and chickpeas around the bowl.
  4. Top with sauerkraut and pickled onion in the center.
  5. Drizzle with dressing and sprinkle with cashews.

Tip: Thin the dressing with a little water or extra vinegar if it thickens too much from the flax.
