Ingredients

  • 1/4 cup vegetable broth
  • 1 fennel bulb, finely diced
  • 1 shallot, minced
  • 3 cloves garlic, minced
  • 1 sprig rosemary
  • 1/4 tsp salt (optional)
  • 1 ½ cups white beans, drained
  • 2 tsp fresh rosemary, minced
  • 2 tbsp vegetable broth
  • 3 more cloves garlic, minced
  • 1/4 tsp red pepper flakes

Method

  1. Heat the broth in a pan over medium heat. Add the fennel, shallot, garlic, rosemary sprig, and salt, and cook about 10 minutes until the fennel softens. Remove the rosemary sprig.
  2. In a small pan, cook the remaining garlic and chili flakes with 2 tbsp broth over medium heat until fragrant, about 2 minutes, for a quick soffritto.
  3. Add the white beans to the fennel mixture and mash to your desired texture, leaving some beans whole for body.
  4. Stir in the soffritto and fresh rosemary. Warm through and season to taste.
