Ingredients

  • Peanut butter: 1 cup peanuts
  • Ice cream: 6 dates, de-seeded
  • 1/4 cup water
  • 4 frozen bananas
  • 1 tbsp homemade peanut butter (from above)
  • 1/2 tbsp jaggery powder
  • 1/8 tsp rock salt
  • Topping: 1 tbsp almonds, roasted and chopped
  • 1 tbsp peanut butter

Method

  1. To make peanut butter: heat a pot, add the peanuts, and roast them over a low flame while continuously stirring for 8 minutes.
  2. Transfer the roasted peanuts into a blender and blend for 5-7 minutes. Initially the peanuts will turn into a powder, then transform into a creamy, buttery substance. If it sticks to the side, scrape it down and blend again.
  3. Place the dates and water in a blender and blend until a paste is formed.
  4. Add all the remaining ice cream ingredients to the blender and blend again until smooth.
  5. Scoop out the ice cream into bowls, add the toppings, and serve cold.

Tip: Peel and slice 4 bananas and freeze for 6 hours. The homemade peanut butter takes patience - usually 5-7 minutes of continuous blending before it turns from powder to butter.

Highlights: High in vitamin E, potassium and magnesium.
